Most of the mechanics of seed saving don't change by zone — a self-pollinating tomato saves the same way in Southland as it does in Northland. What your zone actually decides is whether a slow-maturing crop gets enough season to finish, and whether a biennial's roots survive the winter it needs to flower. Everything else below is about the crop, not the climate.

Start With What You're Already Growing

Most of the cultivars behind this site's planting data are already suited to seed saving without you doing anything differently: 334 of the 363 cultivars sourced across this site are heirloom or open-pollinated varieties, meaning seed saved from a healthy, true-to-type plant grows into the same variety next season. A smaller group — 29 cultivars, concentrated in Carrot, Tomato, Broccoli, Cucumber, Spinach, Courgette, Beetroot, Kale and Pumpkin — are F1 hybrids. Seed saved from a hybrid plant won't come true; the next generation reverts toward its parent lines rather than repeating the plant you grew. If you're set on saving seed from one of those crops, check which of your cultivars is the hybrid one and save from a different, open-pollinated variety of the same crop instead — or plan to buy fresh hybrid seed each season for that one.

The Easy Group: Self-Pollinating Annuals

Tomato, peas, and broad and climbing beans are the best crops to start with. All four are largely self-pollinating, so a single plant of a variety reliably produces seed true to itself without needing to keep other varieties apart. Let a healthy fruit or pod mature and dry (or ferment tomato seed briefly to remove the gel coating before drying), and you've got viable seed with minimal extra effort. Lettuce and basil are close behind — mostly self-pollinating, with only occasional bee-driven crossing, so treat multiple varieties the same season as a minor risk rather than a real problem.

The Group That Needs Distance or Discipline

These cross-pollinate readily, either by insects or wind, so growing more than one variety of the same crop and letting both flower at once risks a seed crop that isn't true to either parent:

  • Cucurbits — courgette, pumpkin, cucumber. Bees move pollen freely between varieties of the same species, so two courgette varieties flowering together will cross. Either grow one variety per season if you're saving seed, hand-pollinate and bag the flowers, or keep varieties far enough apart that bees aren't crossing them.
  • Brassica oleracea — broccoli, kale, brussels sprouts. All three are the same species underneath their very different vegetables, and they cross-pollinate each other freely. Overwintered broccoli and kale flowering in the same garden at the same time won't breed true. Let only one of the three flower for seed in a given season.
  • Brassica rapa — turnip, pak choy, mizuna. A separate crossing group from the oleracea trio above (different species, so they don't cross each other), but turnip, pak choy and mizuna do cross among themselves — same one-flowering-at-a-time discipline applies within this group.
  • Beetroot and silverbeet. Same species (Beta vulgaris), wind-pollinated, and they cross with each other as well as between varieties — don't let both flower for seed in the same season if you want either to come true.
  • Onion and shallot, carrot, spinach, coriander, radish. All insect- or wind-pollinated cross-pollinators. The same rule applies: one variety flowering for seed at a time, or real distance between varieties if you're growing more than one.

The Group That Needs a Winter First

Carrot, beetroot, silverbeet, onion, shallot, and the brassicas above are all biennial — they don't flower and set seed in their first season at all. The plant needs a cold period (vernalization) before it will bolt to flower the following season, which is exactly the mechanism behind an unwanted early bolt in some of these crops when a cold snap hits at the wrong time. For seed saving, this is deliberate rather than a problem: leave a good root or plant in the ground (or lift and store it, depending on the crop) over winter, and it flowers and sets seed the second season instead of the first.

This is the one part of seed saving where your zone genuinely changes the outcome, not just the wording. A biennial root left in the ground needs to survive the winter it's vernalizing through — NZ cool/mountain's harder frosts are more likely to damage or kill an unprotected root over winter than a temperate garden's milder cold, so mulching heavily or lifting and storing the root somewhere frost-free is worth the extra step in a cool/mountain garden specifically, where a temperate gardener might get away with leaving it in open ground.

Where Season Length Actually Matters

The other real zone difference is whether a slow crop gets enough season to finish drying seed before the cold shuts it down. NZ cool/mountain's first autumn frost lands in March, a month earlier than temperate's April — for a crop like pumpkin that needs its full season just to mature the fruit, let alone dry seed inside it afterward, that extra month in a temperate garden is genuinely the difference between a seed crop that finishes and one that doesn't. If you're saving seed from a long-season crop in a shorter zone, sow at the very start of its window rather than the middle, so there's no slack left to lose.

What Doesn't Save as Seed at All

Garlic and shallot are propagated from cloves or offsets, not seed, in a home garden context — save your best bulbs to replant rather than looking for seed. Jerusalem artichoke and yacon are perennial tuber crops propagated by dividing the tuber, the same logic.

Storing What You've Saved

Dry seed fully before storing — properly dry seed snaps rather than bends. Keep it somewhere cool, dark and dry; a sealed jar in a cupboard beats a paper packet left somewhere damp. Viability varies a lot by crop: onion-family seed is notoriously short-lived and worth using within a year or two, while tomato, lettuce and cucumber seed can stay viable for several years stored well. Label everything with the variety and the year — a jar of unlabelled seed is worth very little by the time you go looking for it next spring.
